Alvaro Machado
Alvaro Machado, SuViche Hospitality Group’s corporate chef, started his culinary adventure as a child while cooking with his grandmother, who taught him the fundamentals of cooking Peruvian cuisine. Alvaro followed his passion and studied at Culinary Arts at Le Cordon Bleu in Lima, Peru. As a student, he worked and interned at fine dining restaurants in Peru. After succeeding in the program, Alvaro decided to pursue a kitchen management degree at D’Gallia Institute in Lima, Peru where he finished at the top of his class.
Alvaro started his post-educational career as a prep cook at the high-end restaurant, Wallqa, located in the heart of the Miraflores district of Lima. He then worked his way up to head chef, working for famous Peruvian Chef Coque Ossio at his renowned restaurants – INO and Cafe Del Mar. Shortly after, he began working in a tapas-style restaurant learning the concept of Spanish tapas and infusing Peruvian food using that same style. After meeting Chef Jaime Pesaque, Machado started a new chapter of his career in the United States at the Westin Hotel and Resorts in Ft. Myers, Florida. Now, he oversees the culinary department and initiatives at SuViche Hospitality Group.
