Andrea Rubano, born in 1993 in Piaggine, a small village in Alto Cilento, has been sous chef at the restaurant Il Sereno Al Lago (1 Michelin Star), within the 5*L Il Sereno in Torno (CO), since 2022.
He has now been working alongside executive chef Raffaele Lenzi for 7 years, managing the brigade on an operational level and creating dishes together with Lenzi.
“I like to concentrate on reworking recipes, thinking up new combinations together with the chef, who has always placed unconditional trust in me, and who has given me the opportunity to grow and offer my contribution since I arrived on the shores of Torno”.
Andrea Rubano\\\’s career started in 2014 at the Pisacco restaurant in Milan. He soon had the opportunity to challenge himself with the world of fine dining, and in 2015 he had the opportunity to became sous chef at Le Trabe, 1 Michelin star, in Paestum (SA). In 2016, he spent the season at the 5* Hôtel La Plage Casadelmar in Porto-Vecchio, Corsica, where he became acquainted with the environment of the luxury hôtellerie, and took on board all the dynamics that belong to hotel catering. Until, in 2017, he put all the experience he had gained on the plate and answered the call of Il Sereno. He started as kitchen commis, then became junior sous chef and finally took on the role of sous chef in 2022, teaming up with Giuseppe Aresta. In the meantime there was a parenthesis during the 2019-2020 winter season at St. Hubertus under the guidance of the 3 Michelin-starred chef Norbert Niederkofler. Today, Andrea is one of the stalwarts on whom Raffaele Lenzi places his utmost trust.
