Born in Guadalajara, Jalisco, Chef Daniel Zeledon has long been captivated by the culinary richness of his homeland. As a child, he began helping his family in the kitchen, igniting a passion for cooking that would shape his future.
Daniel’s culinary journey led him across Mexico, from Oaxaca to Mexico City, and into Central America, where he explored the vibrant flavors of Nicaragua and Costa Rica. Eventually, he settled in Miami. During the pandemic, he boldly opened Don Maguey Mexican Restaurant in the heart of Flagler Street. Despite the challenges, Daniel and his dedicated team transformed this vision into one of Miami’s finest Mexican dining experiences.
At Don Maguey, Chef Daniel showcases his love for authentic flavors, particularly in his renowned quesabirria tacos and secret family recipe for mole negro. The restaurant emphasizes regional Mexican cuisine, using ingredients imported directly from Mexico to ensure a true taste of tradition.
The name “Don Maguey” honors his uncle, Señor Lino Gasga, a revered jímador from Oaxaca who passed down agave cultivation traditions through generations. Inspired by this legacy, Daniel and his team work tirelessly every day, preparing delicious dishes that transport diners to the heart of Mexico.
