Chef de Cuisine, Katsuya South Beach
Chef Fernando Vazquez is a rising star in Miami scene’s Culinary Industry – a true Miami local of Cuban and Puerto Rican descent, Chef Fernando’s career path has aligned with the growth of Magic City where he was born and raised.
All thanks to his love of food as a child, he grew up watching his Cuban mother in the kitchen and was inspired by the flavors and spices of Miami’s local Latin Cuisine. Not much later after High School paving his way into an unconventional learning path, Chef Fernando finds himself at 19 years old in a popular local town restaurant serving Classic Southern American Cuisine as a Line Cook. He learned his techniques and earned his credentials all under the kitchen hood and behind the line throughout the years.
His first career-break was being a Sous Chef at Donna Mare Restaurant in the Art Deco Miami Beach Oceanfront Cadillac Hotel catering Italian-American Cuisine. Chef Fernando was introduced to the Southeast Asian Cuisine as an Executive Sous Chef at the popular high-volume Downtown Miami Restaurant, KOMODO by Groot
Hospitality.
With 10+ years of experience, he’s proven himself as a multi-faceted young Chef in the industry with experience in diverse flavors, while staying current and up-to-date with the culinary demands of the ever-growing City of Miami. Chef Fernando is now the Chef de Cuisine at Katsuya Restaurant in SLS Hotel South Beach and supports the HYDE Beach Club’s kitchen.
When not wearing his Kitchen Clogs working long hours, Chef Fernando is in one of his Sneaker Collections, spending time with his children and considers Fatherhood as the most important career of his life.
