Born and raised in Lima, Peru, Chef Juan Alfonso Urrutia is the Corporate Chef at MCK Hospitality. His passion for culinary arts began at a young age when he would learn the culture, traditions and techniques of Peruvian cuisine at home. Experiences like these led him to graduate from Le Cordon Bleu Peru and to work at critically acclaimed restaurants throughout the country, later spending four years in Japan. His time in Japan provided him with a unique opportunity to experience Japanese traditions and philosophy firsthand, which fueled his passion for Nikkei cuisine.
With more than 20 years of experience in the kitchen, Chef Juan has played a vital role in the development of new concepts and brands such as Ko Asian kitchen, a casual dining concept that involves multicultural Asian cuisine; Dondoh robata grill, an all-Japanese whiskey bar and steakhouse; Barrio, a contemporary gourmet approach to Peru’s traditional and local food; and Osaka Nikkei, the fine dining Nikkei cuisine restaurants with multiple locations all over South America and the U.S.
Chef Juan’s impressive track record finally led him to join Osaka Nikkei Miami where he develops innovative menus using traditional dishes with his own flair. For a truly multi-sensory experience, Chef Juan creates dishes with a balance between flavors, textures, and visual presentation. His passion for prehispanic and Japanese cultures as well as his heightened senses of taste and smell have been key elements in the development of Osaka’s menus. Located in the heart of Brickell, Osaka blends to perfection the millenary precision of Japanese techniques with the unique flavors of Peruvian cuisine. The menus offer a variety of raw, cooked, cold, hot, seafood and meat dishes such as popular ceviches, tiraditos, Peruvian Izakaya dishes, omakase platters and more.
Chef Juan currently lives in Miami with his family and enjoys the constant evolution of the city.
