Chef Victor Rosado\’s culinary journey began in his birthplace Puerto Rico, where he cultivated a deep-seated passion for cooking from a young age, learning cherished family recipes alongside his grandparents. This early immersion sparked his lifelong dedication to the culinary arts.
His journey into the world of cuisine began with formal education and a bachelor’s degree in culinary arts from Universidad del Este, where he excelled in culinary arts and distinguished himself in national competitions, earning multiple accolades that underscored his talent and dedication. This led him to get the recognition and award by the university of Distinguish Ex Alumni.
Rosado\’s professional career launched at The Breakers Hotel in Palm Beach, Florida, where he immersed himself in the intricacies of luxury. He continued to climb the culinary ladder, joining the opening team at La Concha Renaissance Hotel’s renowned Perla restaurant in Puerto Rico. His role as Chef d’ Partie contributed to Perla’s reputation as one of Puerto Rico’s top fine dining destinations, celebrated globally for its exquisite fine dining experience and awarded one of the most beautiful restaurants in the world.
His journey towards excellence continued at Chef Jean-George’s Fern Restaurant at the 5-star 5-diamond St. Regis Bahia Beach Resort, where he served as Sous Chef. Here, his dedication to culinary innovation and precision helped the restaurant earn prestigious AAA 4 Diamond status, solidifying his reputation as a chef of extraordinary skill.
In a pivotal career move, Rosado assumed the role of Chef de Cuisine at Mi Casa Restaurant by José Andrés at the first 5-star 5-diamond in the Caribbean hotel, Dorado Beach, a Ritz Carlton Reserve. Under his leadership, Mi Casa garnered significant acclaim, including a nomination for \”Best New Restaurant\” by the James Beard Foundation, #4 Best New Restaurant in the Caribbean and Latin America by daily meal, 101 best hotel restaurant of the world and multiple AAA 4 Diamond awards. Rosado\’s tenure at Mi Casa was marked by culinary excellence and participation in esteemed culinary festivals across the Caribbean, alongside renowned chefs such as Eric Ripert Anthony Bourdain, Dominique Crenn, Daniel Humm and Emeril Lagasse.
In 2015, S.Pellegrino launched the S.Pellegrino Young Chef Academy Competition to identify the best young chefs in the world. This time around Rosado was picked as one of the Young Chefs to be part of the South America & Caribbean region that took place in Brazil and yet again, he was chosen, to take part on the 2016 edition participating that year in the North America region that was held in New York City.
Entrepreneurial spirit led Rosado to launch his own restaurant concept, El Yunque Treehouse Restaurant, celebrating Puerto Rican flavors. But due to the tragic hurricanes of 2017, the restaurant was destroyed after 4 months of opening this took him back to South Florida. There, he reunited with Chef José Andrés as Chef de Cuisine for his Sea Food Concept Bazaar Mar and subsequently assumed the role of Executive Chef at SLS Brickell, where he revitalized the culinary offerings, earning praise from locals and visitors alike. As part of his responsibilities was the revamp of Filia, where he transforms the restaurant into a beloved dining destination known for its warm and comforting dishes that become one of the neighborhood favorite spots in Brickell.
In 2024, Rosado embraced a new challenge as Executive Chef of DUA Miami Autograph Collection Hotel, creating AHU/MAR Restaurant. Here, he continues to showcase his expertise by blending the rich flavors of Puerto Rican cuisine with fresh seafood, emphasizing wood fire cooking to create a distinctive and elevated dining experience that reflects his culinary heritage and passion for excellence.
